We’re butchering our first Wagyu/Piedmont cross steer! His “name” is Green 72, and we’ve been watching him grow for a little over two years now. He’s as tall as he’s gonna get, so we’re ready to grain him out. He’ll be ready for your freezer in mid-October.
72 is a 50/50 Wagyu/Piedmont cross. He has the tenderness gene that makes Piedmontese cattle so special. We can’t wait to see how much intramuscular fat the Wagyu brought to this animal. And of course, we expect the flavor to be unlike any beef we’ve ever tasted.
