Top sirloin steak is one of the most versatile cuts of beef. Cut from the hip area, near the round primal, this area of the cow gets a lot of exercises, so top sirloin steak is naturally lean. Top sirloin flavorful like a roast, but it can be cooked quickly like a steak… don’t pass on it just because it doesn’t have the flashy price tag of a ribeye or filet.
Just season this steak liberally with salt (or a marinade of your choice) and leave it in the fridge the night before you plan to cook it. It’ll be ready for steak-and-eggs the next morning or a quick pan-fried steak dinner.
