Piedmontese beef comes from a rare Italian cattle breed known for a unique genetic trait that promotes dense muscle growth without heavy fat. In a meal, it offers the rich, savory flavor and melt-in-the-mouth tenderness of premium steak—all while being exceptionally lean, high in protein, and lower in calories and fat than traditional beef.

What it brings to the table:The “Prime” Texture without the Fat: Because Piedmontese muscle fibers are densely packed and feature very little connective tissue, cuts are shockingly tender. It challenges USDA Prime-grade steaks in tenderness but relies on its unique genetic makeup rather than heavy marbling.

Rich, Clean Flavor: Unlike traditional grass-fed beef that can sometimes taste gamey or earthy, Piedmontese delivers a mild, highly satisfying, and hearty “beefy” flavor.

Experience the convenience of having a wide variety of our grassfed and / or grass-fed grain finished beef cuts right in your freezer. You’ll be ready for holiday feasts, summer grilling, and date night dinner-for-two without the hassle of going to the grocery store. We offer free delivery within a 50-mile radius with the purchase of a share. The highest quality nutrient-dense beef will be right in your home, direct from our pastures. (Farm to Table.)

Our Piedmontese cattle eat grass throughout their lives, and a few are finished with alfalfa and grain for extra flavor and marbling. This Piedmontese is grass fed and grass finished, and slaughter date is 02July2026.

Our beef is slaughtered, aged, and processed, just a short drive away from our ranch in an independent animal Welfare Approved slaughterhouse and processing facility. Some are processed through USDA inspected facilities as well. Once you’ve experienced the flavor of our FRESH, grass-fed beef, or grass-fed grain finished beef raised on our nearby pastures, you won’t want to eat any other beef.

The cost is $8.75/lb hanging weight for a 1/4 share. Slaughter, processing, and disposal, are included in the price per pound.

Your quarter beef share may estimate roughly 200 pounds hanging weight. The deposit is half the estimated total hanging weight. Your total price for your 1/4 share will estimate $1750 total. (Give or take). The final payment amount will be calculated when the animal is harvested, and you’ll need to pay the remaining price of your desired share once the total hanging weight is given from the processing facility. Your product is normally ready within 30 days of final payment. Your deposit is nonrefundable.

What’s included with a quarter beef? Example:

A 200 lb quarter of beef will yield approximately 120 to 130 lbs of processed beef. This is after accounting for the weight lost during the cutting and packaging process, which typically results in a 30-40% decrease from the hanging weight,

(Remember, this is after beef is cut and packaged.)

• 4 Top Sirloin Steaks

• 4 Eye of Round Steaks (2 pkg)

• 4 Sirloin Tip Steaks (2 pkg)

• 2 Fajita Meat

• 4 Short Ribs

• 2 Rump Roast

• 1 Chuck Roast

• 1 Brisket

• 4 Stew Meat (1 lb pkg)

• 28 lbs Ground Beef (1lb pkg)

Freezer space:

2.25 cu. feet. Picture 4 brown paper grocery sacks about 3/4 full. All amounts are minimums. These are the amounts we stide to meet for each animal we harvest, but we aim to overdeliver. Each processing facility is different and may not offer these exact cuts or specialty cuts. We try our best to offer a cut sheet to choose from and what is offered by the processing facility.

Customers may ask to keep the tongue or heart if desired. First come, first served. (Theirs only one of each per animal).

Let us know if you desire any of the soup bones from your share as well.

All steaks are cut to 1-inch or 1.25-inch thickness, except for the filets, which are normally cut two inches thick.

Once your share is processed and ready for pick up, shares are ready to be delivered to any of our convenient pickup locations or home delivery. You may choose to pick up from our ranch as well. The total for your desired share is a set price, and you’ll receive a standardized selection of our most popular cuts.

For customers purchasing a whole beef share, custom cuts are available upon request if offered by processing facility. As an example, a whole share, depending on the hanging weight of the animal and the percentage of bone-in and boneless cuts, a customer can expect to yield 50-65% of a 800 lb aged carcass or 480 lbs of finished product. We stide to yield a total hanging weight of 750 to 800 pounds on each bovine we harvest.
